Kit Kat Bars (No Cook!)

The truth - I'm a MESSY cook. Actually a MESSY seamstress, MESSY present-wrapper, MESSY painter, I guess I'm just a bit messy when I'm being creative. So this is what the kitchen looks like when the baking goddess is busy. You can't hear Amy Grant's Christmas album playing, but it is, right there on my CD player next to the sink. And if I could only keep one appliance, after my coffeepot which does not count, because it's not 'an appliance' but rather electrical life support, it would be my mixer. Saved my allowance for a couple of months for it, and well worth every penny. Once I get to be an old lady, it's going to have to stay on the counter because it weighs a ton.

The kitchen would look better if there really were elves, and they liked to do dishes. Since there aren't elves, I wash as I reneed something, depending on what was left in the measuring cup or spoon after I used it.

So - here's a recipe for you to try. I'm making it later today, right after the chocolate / heathbar / amond biscotti is done. I found the recipe in this weekend's newspaper:

Kit Kat Cookie Bars

Review: Kids are a given. But even grown-ups will devour this finger-licking no-bake cookie, which resembles a Kit Kat Bar.

81 Keebler club crackers
1 cup margarine (2 sticks)
1 cup brown sugar
1 cup white sugar
1/2 cup milk
2 cups graham cracker crumbs
1 cup semisweet chocolate morsels
3/4 cup peanut butter

Spray a 13 x 9 inch baking pan with no-stick cooking spray. Line with 27 crackers. In a sauce pan, melt margarine and add both sugars, milk and graham cracker crumbs. Bring to a boil and cook for 5 minutes. This makes 3 cups of filling.

In microwave melt chocolate morsels and peanut butter. Pour half (1 1/2 cups) of filling on top of first row of crackers. Line another layer of 27 crackers on top of this filling. Pour remaining half of filling on top of these crackers and top with remaining 27 crackers for third layer. Pour chocolate and peanut butter mixture on top of this third layer of crackers and spread evenly.

Refrigerate until the chocolate-peanut butter layer is set. Cut into squares and serve. Makes about two dozen cookies. (I'll sprinkle mine with chopped pecans and walnuts, because everything is better with nuts on it.)

I'm off to make these and the biscotti, cut out some pj pants (you can't have Christmas Eve without a new pair of pjs!), and clean a bit for sewing here tomorrow. I'll let you know how they turn out, as surely there will be a few corner crumbs to sample. And thank you to Susanne who suggested a bottle of coffee flavoring to go with the biscotti - great idea!

Oh I am SO going to make these tomorrow night! I'd do it tonight but it's far too cold outside to go to the store and get the things I need. ;)

I've got that same mixer except in red. I love it. It will be mixing biscotti tomorrow, too. The recipe for kit kat bars sounds yummy!
