Slavin' Over a Hot Fire: Georgia Cracker Salad

Georgia Cracker Salad

Served at Paula Deen’s Lady and Son’s Restaurant* in Savannah, Georgia. I plan to serve it this week, with her crab cakes. She recommends it with any fish or seafood dish. I recommend her crab cakes- they're fabulous and easy to make.

1 sleeve saltine crackers
1 large tomato, finely chopped
3 green onions, finely chopped
1 ½ cups mayonnaise
1 hard boiled egg, finely chopped

There you go – easy peasy! My 'try it' recipe of the week.

Savannah Crab cakes and Georgia Cracker Salad = perfect meal.

*On my Bucket List to visit someday. I hear they feed you cheddar bay biscuits while you wait in line, outside the restaurant, for a table.

Mmmm, that does sound good.

Maybe I'll add that to the menu plan I'm working on for this week. Feeling like I need to get a little more organized with our meals... I love starting off the week knowing what we are having for dinner every night. Such a stress reducer to not be thinking of it everyday at 5:00!

Hm, that doesn't sound as interesting to me as crab cakes! Funny though, I just finished reading a novel (unusual for me) in which the main character dines frequently at The Lady & Sons. I'd love to get there some day.

Good grief. What could be easier than that? I've seen this recipe many times and never thought to try it. So let me know what you think of it, and you don't even have to try to sell me on the crab cakes. I love, love crab cakes.

I had a friend who used to make this. I had forgotten all about it. It really is yummy.

Dianne, actually I chose the recipe because I thought it sounded so interesting and unusual. I figured anyone could get a decent recipe for crab cakes from allrecipes.com but I've never heard of a salad like this. I'm planning to use canned petite diced tomatoes that come with garlic and onions in them. Should go great with the crab cakes I think.
